Shah's Roast Chicken

The Sunday roast is a traditional British meal that is typically served on a Sunday. This meal usually consists of roasted meat, roasted potato and throw in some Yorkshire puds, stuffing and gravy!
As a firm family favourite dish, there a hundreds of recipes out there to make the perfect roast. Here is our family’s take on the perfect roast chicken! An all time favourite!

INGREDIENTS
1 whole chicken skin on 125g butter 1 tbsp garlic paste 1 tbsp ginger paste 3 vegetable stock cubes Cloves of 1 whole fresh garlic – skin on 1 Celery 3 carrots 2 onions 1 orange 1 lemon Chilli flakes Ground black pepper Nandos garlic peri peri powder Ground nutmeg Fresh coriander leaves Paprika Mixed herbs Lemon juice
METHOD
In a bowl, add the butter and a generous amount of: paprika, mixed herbs, lemon juice, crushed chilli flakes and ground black pepper. Then crumble in the stock cubes, 1 tbsp garlic paste, 1 tbsp ginger paste nd 1 tsp of nutmeg powder. Wash your hands thoroughly and then mix the mixture up until it forms a thick marinade.
Grease an oven proof tray and then place the chicken inside. Make holes in the body of the chicken using a knife and then insert cloves of garlic into each hole.
Massage the chicken with the marinade you made [step 1] and ensure an even coverage across the entire body of the chicken. Stuff the chicken with slices of lemon and orange.
Sprinkle half a packet of the Nando’s Peri Peri rub over the chicken equally across the body and legs. Optional – you can sprinkle some chopped fresh coriander over the body too.
Roughly chop up the leek, carrots and onions and place around the chicken in the oven tray. You may sprinkle some ground black pepper over these lightly. The juice from the vegetables mixed with the chicken will produce a very tasty gravy!
Place in the oven for 1 hour on 200 degrees. Serve with gravy and additional roasted veg.
